LEMON BARS

These tangy and sweet bars are great for any occasion.  Also very easy to make!

Ingredients

CRUST
9 x 13 inch baking pan
Butter (1 cup unsalted)
Flour (2 cups)
​Powdered sugar (1/2 cup)
CUSTARD
​Eggs (4)
Granulated Sugar (1 1/2 cup)
Flour (1/4 cup)
Lemons (4-5 squeezed and zest)

The ingredients for the crust.  2 bars of butter usually is 1 cup.

Melt the butter in the microwave.  About 15 seconds should soften it up.

Mix in the flour and sugar slowly.  You will see lumps of flour when mixing.

Make sure you mix until all the lumps are smoothed out.

Spread the mixture on the bottom of a baking pan/glass so it evens out the bottom.

Preheat oven to 350 F and bake for 15-20 minutes or until golden brown.

While the crust is baking, get out your ingredients for the custard.  4 lemons is usually enough but to make it extra lemony, I use 5.

Beat 4 eggs and add the sugar and flour slowly.  Beat until the consistency becomes custardy.

Squeeze out the lemon juice and feel free to add some zest as well.  Make sure no seeds!

Add the juice back into the custard and mix some more.

Once the crust is done baking, about 15-20 min, pour the custard right on top.

Bake it for another 20  minutes.  The custard will still be liquidy until it cools and hardens up.

Spread some powdered sugar on top and cut them into even square pieces.  

Ready to serve!  These lemon bars go great with hot tea.
