SUAN LA FEN


Ingredients (serves 6-8)

Stock
Chicken and Pork bone (2 lbs total for stock.  Use cut chicken leg for                  increased flavor.  Pork bone should be large with some meat)
Shiitake Mushroom (4-5)
Onion (1/2 peeled)
Ginger (4" knob peeled)

Soup Broth (serves 1)
Fried Chili in Oil (1 tbs) (LaoGanMa is the usual brand for Shichuan flavor)
Sesame Oil (1 tsp)
Black Vinegar (2-3 tbs)
Soy Sauce (1 tbs)

​Sweet Potato Noodles
Topping
Ground Pork (1/2 lb)
Preserved mustard stem (1/2 cup chopped)
Garlic (3-4 cloves minced)
Chinese 5 spice (1 tsp)
Shichuan ground pepper corn (1 tsp)
Chili bean sauce (2 tbs, Pixiang Douban Jiang is a good brand)
Light soy sauce (1 tbs)
Sugar (2-3 tsp)

GARNISH

Green onions (chopped)
Cilantro
Bok Choy
Sesame seeds
Dry Roasted Peanuts

Chicken and pork bones, best if cut up to the bone to release flavors when boiling.

Place bones in a vat of cold water, turn up the heat to blanch/boil for about 5-10 minutes.  You can add the dried shiitake mushrooms at the last minute to soften them and clean them up a bit as well.

Dump the bones out in the sink and clean each bone off with cold water.  Remove the mushrooms to save for later.  Place it back in the pot with boiling water to start cooking the broth.  Water should be just above the bone level usually around 10 cups. Skim the rest of the scum off the top if any are produced.

Dice up the preserved mustard stems for about a cup full.

Mince 3-4 garlic cloves and get out the ground pork, fried chili in oil, and chili bean sauce.
Sizzle the garlic in some oil for a minute, add 2 tbs douban jiang and stir, drop the ground pork and stirfry well for 2 minutes.  Add 1 tsp of 5 spice powder and 1 tsp ground peppercorn.  Add 1/2 cup chopped mustard stems.  Add 1 tbs light soy sauce.  Stirfry until well mixed and pork is cooked.

To prepare a bowl of noodles, first boil the broth for 1 serving about 2-3 cups.  Add 1 tbs chili in oil to the broth.  Add 1 tsp black vinegar. Add 1 tsp soy sauce.  Add a dash of sesame oil.

Now you can boil the potato noodles, read package instructions for how long.  Can also add veggies at this time to boil as well.  After boiling, strain and put noodles and veggies in bowl along with some peanuts.  Can crush the nuts ahead of time if you want.  
Add the broth and some cilantro and chopped green onions and you're done!
