TOMATO EGG DROP SOUP

One of the most popular Chinese soup in households consisting of mostly just egg and tomatoes, this soup is very easy to make.  Also healthy, this tasty soup can be made in 5 to 10 minutes!

Ingredients (serves 3-4)

BROTH
Eggs (1)
Tomato (1)
2 Green onions (scallions chopped) 
​Water or chicken broth
Salt
GARNISH
Green onions (green part chopped)
Black or white pepper

Start by washing, then cutting up a large tomato.  First discard the stem and green parts, then I will cut it in half, then cut each half in 8 smaller pieces shown above.

Chop up the white parts of 2 green onions, discarding the root.  Also cut up the green parts used for garnish once the soup is done.  Beat up 1 egg in a bowl. 
Heat up a small pot on the stove on medium heat with a bit of oil in it.  Start the soup by dropping in the scallions and stir it a bit for 30 seconds.

After you start smelling the fragrance of the scallions, drop in the tomatoes and mix it for about 3-4 minutes or until they soften up.

Chicken broth or water works well here.  If you use chicken broth, then less salt is needed.  If you just use water, then you'll need to add salt for some flavoring.  Pour enough for about 3-4 people, about 5-6 cups.  You can also mix the chicken broth and water together. 
Boil for about 3 minutes.  Pour the beaten egg while stirring and turn off heat.  You should see the egg whiten up and swirl into the soup.  Adjust the soup with salt to your liking.

Finished soup ready to be served!

Top it off with black or white pepper and some chopped onions.  Easy soup in less than 10 minutes!
